Were happy to share one of our favorite fun & delicious fall recipes: our Quinoa & Cranberry Squash Salad! festive cranberries are paired with roasted butternut squash and fresh arugula. If you havent finalized your Thanksgiving menu, or youre still unsure what to contribute, this is a great dish to bring!

Quinoa Salad

Weve included the directions for the vegan and meat versions, but if youre bringing this to a Thanksgiving dinner, it would be just as delicious topped with roasted turkey!

Fall Quinoa & Cranberry Squash Salad

A delicious and healthy fall salad with quinoa, dried cranberries, and butternut squash.

For the Salad
  1. 2 Tablespoons olive oil
  2. 2 Tablespoons maple syrup
  3. 1 clove roasted garlic, smashed
  4. 1 teaspoon freshly grated ginger
  5. 1/8 teaspoon salt
  6. 1/8 teaspoon cayenne pepper
  7. 1/8 cup dried cranberries
  8. 1.5 pounds butternut squash, peeled and diced
  9. 1 pound red onion, finely diced
  10. 1.5 ounces pecans, chopped
  11. 2 Tablespoons fresh parsley
  12. 4 ounces fresh arugula
  13. 4 ounces goat cheese
  14. 16 ounces chicken breast
  15. 1 quart vegetable broth
For the Dressing
  1. 1/3 cup white balsamic
  2. 1/2 Tablespoon maple syrup
  3. 1 1/2 Tablespoons orange juice
  4. 1/2 cup olive oil
  5. 1 Tablespoon freshly grated ginger
  6. 1/2 teaspoon salt
  7. 1/4 teaspoon pepper
  8. 1 Tablespoon dried cranberries
For the Salad
  1. In a large bowl, mix together the olive oil, maple syrup, roasted garlic, ginger, salt, and cayenne. Add cubed butternut squash and chopped onions. Toss until evenly coated.
  2. Lay flat on a baking sheet, and roast 15-20 minutes until cooked and lightly browned. Remove from oven and set aside to cool.
  3. Meanwhile, soak cranberries for about 10 minutes to rehydrate them.
  4. Bring vegetable broth to a boil and simmer chicken breasts until cooked through. Drain and shred with two forks. Mix with a little of the dressing.
  5. Mix together squash & onions, cranberries, and quinoa.
  6. Toss vegetables and chicken with arugula, parsley, dressing, and top with pecans and goat cheese. Serve!
For the Dressing
  1. Add all ingredients except olive oil to blender and blend until cranberries are pureed. Turn blender down and stream in olive oil until combined. Mix with salad, or serve on the side.
