Mother’s Day is right around the corner, ladies and gentlemen! While macaroni art and seedlings grown in Dixie cups were all the rage when you were in elementary school, that’s just not going to cut it these days. Instead, how about a few healthy but still decadent homemade treats?

Drizzle them with nuts, coconut, or white chocolate for a nice design!

4. Plantain Brownies

These plantain brownies are the most popular snack we’ve ever delivered! Many freshies request it regularly! We don’t always have the time and manpower to whip together such delicious treats in addition to hundreds of meals, but you can put this together for a decadent Mother’s Day treat! These brownies can be baked in muffin cups for individual servings, in a regular brownie pan, or in a cast iron skillet as recommended. Note: we use flax eggs and date syrup to keep this recipe vegan for our vegan freshies, and a little lighter! To do the same, simply replace the eggs with flax eggs (one flax egg = 1 Tablespoon ground flax + 3 Tablespoons water, stir and let sit for 10 minutes or overnight), and use a 1-1 date syrup:maple syrup replacement for the sweetener.
